These simple little squares of yumminess went down pretty well at February's candlelit flow evening.
They're super simple to make and use just 5 basic ingredients. So, here is the recipe for you to have a go at whipping up your own batch!
Ingredients:
90g Desiccated Coconut 75g Cashew Nuts 250g Pitted Soft Dates 100g Dark Chocolate
4 tsp Coconut Oil
Method:
1. Place the coconut and cashew nuts in a food processor and whizz until finely chopped. Add the dates and whizz to make a coarse paste. 2. Spread the mixture out on a baking tray lined with a sheet of baking parchment. Place another sheet of baking parchment on top and squish the mixture down to make a flat layer. Place in the fridge. 3. Melt the chocolate and coconut oil or butter together in a heatproof bowl set over a pan of simmering water. Once melted, spread over the date mixture and return to the fridge until set.
4. Cut into bite size pieces and store in an air-tight container in the fridge for up to 5 days.
